#BlackBean Sweet Potato #Veggie Burgers
I am so proud to have finally made blog worthy veggie patties I can't contain myself!!:):):) They taste great and look great which is a major win! The addition of the sweet potato definitely set these apart from the morningstar remakes out there. Give it a try and let me know what you think!
Ingredients
1 can black beans (drained, rinsed and pulsed 3 times in food processor)
1 medium sweet potato (I microwaved but you can bake/steam/etc.)
1/4 red onion (chopped small)
1 Tbls Tomato Paste
1 egg
Seasonings: Salt, No Salt Seasoning Mix, Red Pepper flakes (2 shakes), Garlic Powder (1 tbls)
Coconut Oil
To Make
Mix all ingredients in large bowl until a paste like consistency (make sure to season to taste and don't forget the salt since the beans have been rinsed). Heat Oil in a cast iron (or any) skillet over med/high heat. Form patties with hands (don't work too much to ensure it all stays together) and brown on each side. Makes about 7 small/med sized patties.
